Chicken breast with Mushroom Gravy on Noodles!

So, I must say I did it again :) I made a very delicious dinner that everyone loved! Yeah! Oh, and I made it by scratch! It was so good!

How to make it…

2 skinless boneless chicken breasts

1 cup of water

spaghetti noodles, however many you need

Package of mushroom gravy (or any kind of gravy you have on hand)

1 can of mushrooms

minced garlic (I use the canned kind you find in the produce section of the super market)

Johnny’s Salt

1 Can of green beans

*Cut up chicken how you like it and brown it in pan. Add garlic and Johnny’s Salt to taste. Add packet of gravy mix and cup of water and stir. In the meantime be cooking the spaghetti noodles. Let the chicken and gravy cook on low and add the can of mushrooms. Strain noodles and serve the sauce over the noodles with a side of the green beans! YUM! My kids both loved it as did my hubby and I! Enjoy!

Easy Chicken Enchiladas Recipe

OMG. I am devouring the best, most easiest chicken enchiladas ever! And, I made ‘em myself! So dang easy! The kids even eat them! What is the recipe, you ask? It is below!

Chicken Enchiladas

To make this very simple, you need to go to the store and buy an already cooked rotisserie chicken.

*cut up rotisserie chicken and cube it (need two cups)

*8 0z. Package of Cream Cheese

* olives (1/2 large can)

*Shredded Cheddar Cheese (as much as you want)

*Salsa (whatever kind you enjoy)

*Flour tortillas (8-10 smaller ones)

*One cup of sour cream or plain yogurt

Preheat oven to 350

In a bowl, mix the cubed chicken with the cream cheese (soften it in the microwave first to mix easier). Next, lay out the flour tortillas in a 13×9 pan ( I think that is the size, LOL) and spoon the mixture into the center of the tortillas. Fold up the tortillas and put seam face down in dish. Next, mix the salsa and sour cream in a bowl and spoon it over the chicken enchiladas. Put the enchiladas in the oven for 20 minutes, uncovered. When timer goes off, put as much shredded cheese on the top as you so desire and cut up olives too. Put back into the oven for 15 minutes. Take out, let cool, serve and enjoy!

SUPER easy and sooooo good. It is creamy and I seriously have not eaten a better chicken enchilada (sorry Mom!).

Asparagus, Cream Cheese and Ham Wraps!


Ya, I am kind of experimenting with Cream Cheese lately! Love the stuff and so I want to see what I can make with it! So, me and hubby went to the store and bought asparagus. YUM. To me, it tastes like green beans (when they are both raw, not cooked). So, I was eating them all evening long, just raw! MMMMM!!

K, back to the wraps….

Preheat oven to 300 degrees…

So, I put out cut sandwich ham, laid it out, softened the cream cheese and cut down the asparagus and washed it. Next, I took the cream cheese and put a dollop of it in the center of the ham, took the asparagus and put it on the cream cheese and rolled it up. I did about a dozen of them (you will want to do that many if not more!). Put them into the oven for 15 minutes.

They are EASY, DELICIOUS and my kids, hubby and me loved them!!! If you have guests come over, this is such a quick and easy finger food and mostly healthy too!!! Can’t beat that, right? Enjoy!

I don’t know why, but lately I want to bake and cook new things! Today I made Cream Cheese Pastry Puffs with Chicken bits! YUM! Oh my goodness, yum! The recipe is below: Preheat oven to 400 degrees:

*1 8 0z. package of Phillys Cream Cheese

* small onion diced (optional)

*1 tsp milk

* 1 egg

* 1 chicken breast cooked and diced

*Refrigerated Crescent Rolls (you buy in the tube)

Crescent Roll Cream Cheese & Chicken

Soften cream cheese and mix it in bowl with diced onion, diced cooked chicken and seasoned to taste. Next lay out crescent roll dough and place a small amount of the cream cheese, chicken and onion mix in the middle, then roll it up. Next, mix egg and milk in bowl until well mixed, then spread it over the rolls. Place in oven for 15 minutes on 400 degrees. Let cool and enjoy!! They are soooo good and very easy to make. It looks like you slaved over it, but you don’t!! :) Oh, and kids LOVE them!

Baked Salmon, Sticky Rice, Cooked Asparagus and Chocolate Truffle Cheesecake!

Yep, that is what is for dinner over here tonight! YUM! It all turned out so delicious! I baked the salmon fillets in our oven at 375 degrees for 15 minutes, put a little johnnys seasoning on it and butter. Then I sauteed the asparagus in butter and garlic with a little bit of johnnys seasoning salt. The rice is just sticky rice you can buy at the store. Next was the Chocolate Truffle Cheesecake! I had enough to do two pies!

Chocolate Truffle Cheesecake:

2 pie pans of the oreo cookie already crunched in it

2 tbsp of butter

3 pkg of (8 oz each) Philadelphia cream cheese, softened

1 can of (14 ounces) sweetened condensed milk

2 tsp. vanilla

1 pkg (12 ounces) semi sweet chocolate chips, melted and slightly cooled

4 eggs

Preheat oven to 300 degrees. Beat cream cheese, sweetened condensed milk and vanilla in a large bowl. Add chocolate, mix well. Add eggs and mix well. Pour over pie crust. Bake for 1 hour 5 min. or until center is almost set. Refrigerate at least 4 hours. Garnish with raspberries or whatever you so desire and enjoy! We loved ours!!

Hot Dog Hamburgers!

Say what?! Hot dog hamburgers? Yep, that is what we had last night for dinner. But it really is not a hot dog AND a hamburger combined, it is simply a hamburger, broken up in a hot dog bun :) Ya, had to get a bit creative as we were low on groceries. No hamburger buns, but we hot dog buns, so there ya have it.

I broke up the cooked hamburger sauteed with onion onto the hot dog buns with mayo, ketchup, shredded cheddar cheese and of course pickles! It was very good too!

See, very creative, right? What have you had to do before, in order to get by for a meal, before grocery shopping? Care to share? :)

 

German Pancakes! YUM!

I am always doing the same thing at breakfast time, scrambled eggs with cheese and toast. My poor kids really get tired of it, but me, I am happy that they are getting a good breakfast! But sometimes it just needs to be mixed up a bit! So, I decided to do German Pancakes today. I have done them in the past, but according to my hubby and kids, not often enough! They LOVE them! Especially with all the goodies my hubby puts on them, geesh!

Recipe (this will serve 4-6 people)

Note* I divide the mixture up into two parts and cook separately so my hubby gets his own and my kids get to share their own. I don’t do breakfast, so me not included in this :)

6 eggs beaten to death

1 cup of flour

1/2 cup of milk

1/2 teaspoon of cinnamon

1/2 teaspoon of vanilla extract (I never measure so I guess )

beat the heck out of it all until smooth and frothy

pour it into a shallow baking metal skillet or a glass baking dish 9×9 (what I use)

Put it into the oven that was preheated (btw) at 450 degrees. Set the timer for 22 minutes and go and blog for a few. Then when you hear the timer go off, get your butt off of the computer and put the following on the German pancake:

fresh strawberries

syrup

butter (lots of it)

powdered sugar

and whatever else you love!

Homemade Chicken Noodle Soup Recipe :)

So, since it is sooo frigid out lately, at least here where I live, I crave hot meals. I love making things by scratch and that way my whole home smells delicious all day long! So, chicken noodle soup from scratch is one of my specialties :)

How I make it:

1 box of chicken broth

2 cups of water

2 chicken bullion cubes

1/2 onion

3 celery stalks

2 handfuls of baby carrots chopped

a can of cut up mushrooms (or you can use fresh ones)

Johnny’s salt to taste

a spoonful of garlic (I use it from a jar, that i get in the produce department of the grocery store)

Egg noodles, about 1/2 of a bag

Chicken breast, cut up really good (usually I use about 2 breasts to feed a family of 4, lol, that sounds hillarious, doesn’t it/? :) )

You can throw it all in a slow cooker for about 4 hours on high, or you can cook it on the stove top. I use the slow cooker :)

I usually serve this up with hot rolls (Rhodes Rolls are my all time favorite, you can find them in the frozen section of your grocery store)

My whole family loves this and it is HEALTHY!!! Let me know if you make it!

Homemade Potato Corn Chowder in The Slowwwwwwwww Cooker!


I just wanted to share with my viewers a favorite recipe of mine, and yes, I made it up :)

Homemade Potato Corn Chowder (In The Slow Cooker)

Recipe:

5 or 6 large potatoes

1 medium onion, cut up

4 celery stocks

Couple of handfuls of baby carrots, cut up if you want

Johnny’s All Salt ;)

2 cups of water

1/2 bag of frozen corn

1 quart of half and half

teaspoon of diced garlic (we used the jarred garlic you can buy in the veggie section of your grocery store)

Prepare it as you like, season to taste and put it all together in your slow cooker. I usually cook mine in my slow cooker on high for about 4 hours. I can already smell it, and it smells sooooo good! Talk about a wonderful, healthy meal for the whole family on a COLD day! I serve this up with warm rolls! Enjoy, I know we will :)

A Quick & Easy Delicious Chicken Meal

So, tonight our pantry was running on empty, so I had to improvise! I decided to throw together some stuff and it turned out sooo good! So, I want to share it with you! It is healthy and VERY quick to make!

Mama’s Chicken & Rice:

*2 boneless chicken breasts

*1 can of campbells cream of chicken & garlic soup (condensed)

*olive oil (to cook chicken in)

*Johnny’s All salt (or any seasoning you like)

* garlic powder or fresh garlic diced

* 1/2 onion

*Frozen Peas (about a cup)

*white Rice (2 cups)

Start cooking rice and then start cooking the chicken (in seperate skillet of course & I cut the chicken up fairly well ;) ) Brown chicken, add onion, frozen peas and season to your taste (I use Johnnys all salt and garlic powder or fresh garlic). When chicken is cooked, add can of condensed chicken and garlic soup and mix real good. Put lid on it and turn to low. Let it cook for about 15 more minutes, stirring occasionally.

By then, the rice should be done too. Spoon chicken over the rice and enjoy! It is so good and so dang easy! Oh, and my kids really liked it :) I also added Rhodes rolls to it :)
