During the Fall and Winter months, I really enjoy cooking! Something about colder weather that brings out the chef in me 🙂

I received the Southern Living Superfast Southern: Comfort Food in 20 Minutes or Less! Cookbook and I am putting it to the test. With kids back to school and more time for me to organize meals, this cook book is my newest BFF!

There are many great and easy meal ideas inside this cookbook. I love how easy most of them are to make. My kitchen will be smelling great in no time! Plus, being short on time is never an excuse to be short on flavor and this cookbook has some tasty meals in it!

About The Cookbook:

It’s the perfect solution for those busy moms and home cooks who know there’s nothing better than the comfort of a from-scratch, Southern meal. Didn’t think it would be possible to replicate that nostalgia and extra-something-special that’s in all your comfort food faves? Think again.Crab and Oyster Bisque, Quick-Start Bacon-Cheddar Mac ‘n Cheese, and Pork Chops with Shallot-Cranberry Sauce are just a few of the mouth-watering dishes that are sure to hit the spot.
Highlights include:
·      Top 10 Superfast Secrets – simple rules for quick cooking.
·      Instant Adds and Easy Sides — clever store-bought toppings and simple sides that pump up the flavor in a snap.
·      Ready-in-30 and 15-Minute-Prep tabs mark the time for each recipe, so you’ll know at-a-glance what to expect.
·      Healthy Fast & Fresh Salads like the Chicken BLT Salad and Tex-Mex Beef-and-Beans Chopped Salad.
·      Simple Suppers including Grilled Grouper with Watermelon Salsa and Black-Eyed Pea Cakes with Heirloom Tomatoes and Slaw.
·      Speedy Skillets like Chicken Cutlets with Pecan Sauce, Easy Skillet Pimiento Mac-n-Cheese, and Fried Catfish with Pickled Peppers.
·      As no Southern meal is complete without dessert, Hurry Up, Sugar offers up sweet ideas like Deep-Fried MoonPies and Key Lime Pie, prepared in a flash.

One of the many things I love about this cookbook is that it has PICTURES! I need a cookbook with pictures, I don’t like not being able to see what I am going to be cooking, it is important to see pictures! Also, there is over 120+ recipes in this book, so I have lots of meals/recipes to chose from!
