I made the most delicious Carmel-Pecan Cheesecake the other day and wanted to share it with you. Oh my goodness it was delicious! It was my first time making it and it turned out perfect!
Caramel-Pecan Cheesecake
You will need:
2 graham cracker pie crusts (you just buy at the store)
1 cup or so of coarsely chopped pecans, divided
2 tbsp. of granulated sugar
1/2 stick of butter ( softened)
4 pkg (8 oz each) of cream cheese (softened)
1 cup firmly pressed brown sugar
2 tbsp. all-purpose flour
1/2 cup of sour cream
1 tbsp vanilla
3 eggs
1 bag of kraft caramels, divided
Preheat oven to 350 degrees. Beat the cream cheese, brown sugar, and flour. Add sour cream and vanilla.
Add eggs. Microwave 1/2 the caramels in a bowl with 1 tbsp of water on high for 1 minute.
Make sure caramels are completely melted when stirred. Add to the batter.
Pour over the crust and bake for 40 minutes.
Sprinkle top with pecans and refrigerate for at least 4 hours.
Microwave remaining caramels and drizzle over cheesecake.
I also cut up some whole caramels and sprinkled them on the cheesecake just to add more caramel taste (my hubby’s idea!).
