I made the most delicious Carmel-Pecan Cheesecake the other day and wanted to share it with you. Oh my goodness it was delicious! It was the first time making it and it turned out perfect!
You will need:
2 graham cracker pie crusts (you just buy at the store)
1 cup or so of coarsly chopped pecans, divided
2 tbsp. of granulated sugar
1/2 stick of butter ( softened)
4 pkg (8 oz each) of cream cheese (softened)
1 cup firmly pressed brown sugar
2 tbsp. all purpose flour
1/2 cup of sour cream
1 tbsp vanilla
1 bag of kraft carmels, divided
Preheat oven to 350 degrees. Beat the cream cheese, brown sugar and flour. Add sour cream and vanilla. Add eggs. Microwave 1/2 the carmels in a bowl with 1 tbsp of water on high for 1 minute. Make sure carmels are completely melted when stirred. Add to the batter. Pour over crust and bake for 40 minutes. Sprinkle top with pecans and refrigerate for at least 4 hours. Microwave remaining carmels and drizzle over cheesecake. I also cut up some whole carmels and sprinkled on the cheesecake just to add more carmel taste (my hubbys idea!).
