Baked Catfish

Seafood isn’t just a healthy alternative to meat, it’s also scrumptious. If you’re looking to inject a bit of New Orleans flavor into their home cooking repertoire, this super-simple catfish recipe will leave you purring.

For this recipe, you’ll need:

*Four catfish fillets

*One cup of cornmeal

*Tablespoon of Cajun seasoning

*Quarter cup of extra-virgin olive oil

*Large plate

*Baking pan

Cook:

*Preheat your oven to 425 degrees

*Drizzle 2 tablespoons oil over the baking pan.

*On your plate, combine the Cajun seasoning with the cornmeal, before dredging the catfish fillets in the mixture.

*Place the fillets on the baking sheet, drizzling the remaining oil over the top.

*Bake until soft and golden, and enjoy!

Linguine Alfredo

With everything we know today about the impact refined carbs have on health, pasta lovers have it tough. That goes double for pasta lovers with a weakness for everyone’s favorite cream-based sauce: alfredo. With a little ingenuity, though, you can still enjoy this decadent dish in a slightly less decadent variation.

For this recipe, you’ll need:

*12 ounces of whole wheat linguine

*Three cloves of garlic (minced)

*One cup of low-sodium chicken broth

*Three-quarters cup of 1% milk

*Half cup of freshly grated parmesan

*Two tablespoons all-purpose flour

*One tablespoon extra-virgin olive oil

*Large pot of boiling water

*Large frypan

*Whisk

Cook:

*First, cook the linguine in your pot until al dente. When you’re done, set aside a quarter cup of pasta water before draining the linguine.

*Heat the olive oil in your frypan over medium heat, then add garlic. Allow this the garlic to cook in the oil for about a minute before sprinkling flour evenly over the entire pan.

*Stir and cook until lightly golden

*Slowly add in the chicken broth a little at a time while whisking, making sure to wait for the mixture to become completely smooth before adding more. Bring this mixture to a boil before adding the milk, also while whisking.

*Simmer until the sauce grows thick (2-3 minutes).

*Turn off the heat before adding parmesan and any desired seasonings, then add the linguine and the pasta water. Toss together, and enjoy!

Cauliflower Grilled Cheese

As far as comfort foods go, it’s hard to beat the trusty grilled cheese sandwich! The problem is the bread, whose high carb count packs on the pounds and raises your blood sugar. Bless whatever genius realized the versatility of cauliflower, thanks to whom we can now enjoy guilt-free grilled cheese in just 20 minutes!

For this recipe, you’ll need:

*One head of head cauliflower

*Two eggs (lightly beaten)

*Half cup of finely grated parmesan cheese

*Half cup of oregano

*Cup and a half of shredded white cheddar cheese

*Food processor

*Medium bowl

*Non-stick pan

Cook:

*After cutting the cauliflower into bite-sized pieces, put it in the food processor until it takes on a rice-like consistency.

*In the bowl, mix the cauliflower, eggs, parmesan, and oregano.

*Put your frypan over medium heat and spritz the surface with cooking spray, then add two scoops of your cauliflower mixture side by side.

*Press the two scoops into separate patties with a spatula, letting them cook until golden brown (3-5 minutes) before flipping.

*Cover one of the patties with cheddar before placing the remaining patty on top.

*Cook until the cheese is fully melted (roughly 3 minutes per side), and enjoy!
